Today, I’d like to talk about how our rice-flour muffins, which are by far the most popular of our sweets, came to be.

Rice flour muffins were not initially on the menu!

In the beginning, when the store first opened, the only sweets sold were waffles made with rice flour from Ishikawa Prefecture.

The waffle was a sweet made with local rice flour, but one day a mom with allergies came to the store after hearing that the waffle was flourless.

The person was not a vegan, but she was looking for various gluten-free snacks that she could safely eat for her child who was allergic to wheat.

After hearing the needs of these allergic moms, I did some research .

We found out that vegan and gluten-free sweets are rare and difficult to find, even in the high-end organic supermarket “Ella Wang” in Los Angeles, USA.

How we developed vegan-friendly rice flour muffins

That’s where I got the idea.

We wanted to create a sweet treat that would be easily accessible to people who are looking for vegan & gluten-free products here in Los Angeles in Kanazawa.

The idea was to create a sweet treat that would be accessible to as many people as possible, so we decided to create a vegan and gluten-free

“Muffins”

I thought, let’s develop “Muffin”

That is, the “muffin” sweets have .

Easy sweets that can be eaten with one hand

Easy snack that even children can eat

Currently, there are not enough vegan and gluten-free options

That’s why we decided to develop it! So we decided to develop it.

I started developing the muffins right away, but

Most difficult of all was the softness of the muffins.

Muffins made with rice flour are soft when baked, but they become hard after a while.

How can we keep the texture close to that of flour muffins and still make them taste as good as if they were freshly baked for a long time?

This has been a major challenge.

As I mentioned earlier, it is rare to find vegan and gluten-free sweets, even at Ella Wang, a high-end organic supermarket in Los Angeles, so it was very difficult to find a reference recipe.
We ordered ingredients and recipes from the U.S. and other countries, and revised the recipe many times. <p

I spent many days making it, worrying about it again, researching it, and making it again.

That’s how we got the information about completely vegan sweeteners, chocolate, etc., which led to our current recipe for rice flour muffins.

We have also devised various ways to store the food, so it can now be frozen.

We are still always collecting new information and always trying to make the best muffins.

Vegan-friendly rice flour muffins are still evolving!

In order to give you a variety of flavors to choose from, our rice flour muffins are always available in multiple products, including seasonal flavors.

We are currently using a variety of superfoods to please the health-conscious, especially adults.

Vegans need to be especially conscious of taking vitamin B12-rich chlorella flavors, and other flavors are under development.
